My earlier situation. Spicy Thai cilantro lime “noodle” soup. 😋 really good. I steeped the lemon grass, scallions and cilantro bunch in a miso soup base. Added the dried chanterelle mushrooms and let reduce by half. Removed the lemongrass and cilantro and poured over some yellow squash noodles and garnished with fresh cilantro and scallions. Cooking is such good therapy for me 😎
My treat tonight. Vegan Strawberry ice cream. Chopped and froze some fresh strawberries and 1 medium ripe banana and semi froze some almond milk with a dash of vanilla extract. Blended until smooth and creamy. Tastes as good as real strawberry ice cream. No dairy!
I like my steel cut oats savory. With zucchini and baby kale. Carrot apple orange juice on the side.
