This is my healthy glorious brunch. Eggbeaters with orange peppers and spinach and savory steel cut oats also with spinach. I love spinach. Too bad I’m just eating. I’ve had nothing but coffee all morning. TIP: soak your steel cut oats in water overnight and it reduces cooking time by over half.
